  1. Remove the sticks from the soya chaap and cut them into 1" pieces. You can prepare it on the bone as well, but boneless is ideal..
  2. To marinate the soya chaap, add 1/2 tsp salt, 1/2 tsp Kashmiri red chilli powder, and 1 tsp lemon juice. Mix well and let it marinate for about an hour..
  3. Heat mustard oil to the smoking point. Turn off the heat and let it cool a bit..
  4. Deep fry the chaap pieces on medium heat till they are golden brown. Remove them on a plate and keep aside..
  5. In the same oil, add in the ginger first since it takes time to cook. Then add in garlic. Cook for a minute..
  6. Add in the onions. When it starts to change color, add in the dry masalas - Kashmiri red chilli powder, jeera powder, dhania powder and salt. Mix well..
  7. Add in the white vinegar..
  8. Add in the fried chaap pieces and mix until well coated..
  9. Add in the kasoori methi and garam masala. Mix well..
  10. Cover with a lid and cook for a few minutes so that the chaap pieces absorb the masala..
  11. The Achari Soya Chaap is ready to serve..
