Instructions to make Dahi vindi:

  1. In a kadai add 2 tblspn of oil. Add the vindis and fry till they become dark green from all sides. Keep aside..
  2. Meanwhile in a bowl add the curd, besan, red chilli powder, turmeric powder, garam masala powder, water and mix until it become smooth..
  3. In the same kadai add 1 tblspn of oil. Add the cumin seeds, coriander seeds, methi and hing. Once they splutter add the curry leaves. Then add the prepared curd mixture. Lower tge flame and cook for 2 to 3 mins. You can add water if required..
  4. Now add the fried vindis, salt and sugar. Cover with a lid and cook for another 2 mins over low flame..
  5. Open the lid. Stir and add in the chopped coriander leaves and the dahi vindi is ready to serve. It goes perfect with chapati..
